"America's Favorite Rice", Mahatma Jasmine Rice, Is Now My Favorite Too!

BuzzAgent.com gave me the opportunity to try this wonderful white rice called Mahatma Jasmine Rice.
Mahatma Jasmine Rice is an aromatic long grain rice. Here is a little background information for anyone who hasn't had any prior experience with aromatic rice, like myself. Aromatic rice can be either a white or brown rice, which will have a natural aroma, and flavor, that will remind you of popcorn or roasted nuts. My 10 year old step son, Ryan and I definitely thought it smelled like popcorn.
Although there are different brands of Jasmine rice, Mahatma's Jasmine Rice actually has the 100% Thai Horn Mali green and yellow seal, which is a guarantee to you from the Thai authorities that it is a top quality product that has been grown and packed in Thailand, in the mountain highlands to be exact. This rice is perfect to enhance any Thai or Vietnamese dish that you cook up.
My mother in law was cooking Easter lunch for family and friends and I thought this would be a perfect time to try out the Jasmine Pineapple Pilaf side dish recipe that was included in the box that I received from BuzzAgent.com. (I will include the recipe at the end for anyone interested.)
You can cook this rice on the stove top or in the microwave. If you use the microwave, it is recommended that you only cook one cup of rice at a time, which when fully cooked yields 3 cups of rice, and only takes 15 minutes of total cooking time. I opted for the microwave method this time.
It turned out very soft, tender, and fluffy. I cooked this side dish on Saturday and stored it in the fridge until Sunday's Easter lunch. It held up quite well and was very moist when reheated. (it was even soft when cold)
The Pineapple Pilaf was a winner. A few of the comments I received were from Ryan, he said it was "awesome". Which as anyone with kids knows, is a big compliment! My mother in law said she was "impressed". She was impressed with the actual pilaf not just impressed that I actually cooked, I asked. lol And one of our friends said she wouldn't have thought about pitting pineapples and raisins with rice, which is what the recipe calls for, but she liked it quite well.
This is definitely a rice I will use again and since cooked Jasmine rice remains soft when chilled, it's very versatile and would be an excellent choice for salads or silky rice puddings!

Jasmine Pineapple Pilaf

1 cup Mahatma Jasmine Rice
1/2 cup raisins
1 tbsp margarine
1/2 tsp salt
1 cup sliced green onions
1/2 tsp ground ginger
1/2 cup chopped walnuts
1 can (8 oz) pineapple
tidbits, drained

Prepare rice according to package directions.
Heat 1 tbsp margarine in large skillet over medium high heat. Add onions, walnuts, raisins, salt and ginger. Cook and stir 4 to 5 minutes or until onions are tinder. Add rice and pineapple; stir and heat thoroughly. Serves 4.
